Ayam Masak Lemak Cili Api


Oh ! This is another favorite dish of mine. Superb ! suitable for breakfasting dish.
So lets see how to cook it =)

Ingredients:

4 pieces of chicken
A turmeric leaf
3 thai chilies(pound it)
a tablespoon turmeric powder (marinate it with chicken for half an hour)
a pinch of salt
a teaspoon of tamarind (add a bit of water to make juice)
2 potatoes (cut into four)
a tomato(cut into 2)
a lemongrass (pound it twice only)
1 cup of coconut milk
1 cup of water

Steps:
1) Add pounded Thai chilies, tamarind juice, coconut milk,water,potatoes and chicken in pan add heat for about 8-10 minutes.
2) when the coconuts milk fairly cooked, add turmeric leaves and tomato and finally add salt.
3)Wait another 10-15 minutes. That's all ~

Nasi Goreng Ikan Masin (Salted Fish Fried Rice)




Ingredients:
Shallot ,garlic(both slice) 
1 Perch salted fish ( cut it small)
a dash of salt
1 table spoon of oyster sauce
2 Thai chilies (slice)
1 stem of kai-lan (Chinese broccoli)
2 table spoon of palm oil
2 bowls of rice

steps:
* Heat the oil and fry shallot,garlic, sliced thai chilies and perch salted fish
* Next, fry kai-lan, and add rice,
* Add a little bit of oyster sauce and dash of salt.
*Stir for 5 minutes and DONE~

Pattaya Fried Rice (Nasi Goreng Pattaya)

Hello,
Have you ever taste pattaya fried rice before? This rice is nice and delicious. Most of the time when we eat outside I notice my hubby always order this dish, so I tried to invent my own pattaya recipe. It 's actually a fried rice being wrap with omelette ! So here's the recipe

Ingredients:
(For rice) serve for 2-3 pax
500g of rice
300g of prawn
150g of slice cabbage
100g of chunk carrot
white pepper
pinch of salt
medium shallot
3 garlic
2 tablespoons of palm oil
2 tablespoon of oyster sauce

(Omelette)
5 eggs
pinch of salt
white pepper

Steps:
*heat oil and add slice garlic and shallot
*add oyster sauce and prawn
* add white pepper and carrot (may add little of water to soften it)
*add rice and cabbage and fried for 3-4 minutes
* after that put the rice in a small bowl
* for omellete, beat eggs and add salt and pepper
*heat the pan and pour the beaten eggs and remove the pan a while from heat and add a bowl of rice
*turn on the stove again and start wrap the rice with omelette.
*let it cook and it's simply done =)

*you may dress it with chili sauce*

Kobis Goreng Mamak (Mamak's Style Fried Cabbage)


Another easy recipe for cabbage. simple and delicious~

Ingredients:
Shallot ,garlic(both slice) and anchovies powder (depends on how much is your cabbage)
Cabbage (cut it thinly)
Shredded carrot
mustard seeds
salt
oyster sauce
water
turmeric powder
Ground black pepper
palm oil

steps:
* Heat the oil and fry shallot,garlic and anchovies powder
* Next, fry Cabbage, shredded carrot and mustard seeds,
* Add a little bit of oyster sauce, salt,water and ground black pepper and turmeric powder
*Stir for 5 minutes and DONE~

Kurma Daging

Happy Monday!
Today I would like to share with all of you my fav dish....a kurma daging~~
Yehaaa!
Lets learn how to cook ya!
Ingredients:
300g of meat (slice it)
3 potatoes (cut into four)
a lemongrass (pound it twice)
a medium shallot
50g of chunk carrot
3 tablespoons of kurma powder (add a bit of water to make paste)
A pinch of salt
1 cup of coconuts milk
1 1/2  cups of water
1/2 cup of tamarind juice (add 1 teaspoon of tamarind paste into 1/2 water)
5 curry leaves
2 petals of star anise
2 cardamom pods
a Cinnamon
2 cloves
3 tablespoons of palm oil

Steps:
*Heat the oil and add shallot, curry leaves, star anise, cardamom pods,cinnamon, cloves and lemongrass
* Wait until it turns slightly brown and add kurma paste and stir it for 5 minutes
*Add water,coconuts milk and tamarind juice. stir for 3 minutes
*Add carrot, potatoes and meat leave it for 10-15 minutes
*Finish it with pinch of salt
*Ready to serve!
---serve with rice---

Kari Daging ala Mamak & Roti Jala

I love this dish so much. It's Suitable for breakfast and teatime. Again in english this dish may be translate as "Beef curry with lacey pancakes" it sounds awkward right? hehe. So basically it's a beef curry as a dipping sauce for lacey pancakes. OK i'll share how to make this recipe but , let's sneak the photo first!


                                                        ROTI JALA OR LACEY PANCAKES



BEEF CURRY



Part 1 (preparing lacey pancakes)
Ingredients:
2 cups of flour
1 teaspoon of salt
1/2 teaspoon of turmeric powder
2 cups of water
 lacey pancakes mold

*Add all the ingredients
*heat pan (non-stick) and
* use the net mold by turns it in circular motion until it form a net
* let it cook and fold it into semicircle and fold it again until it looks like triangle





Part 2 (Dipping sauce)

1/2 teaspoon of fenugreek
1/2 teaspoon of fennel seeds
1/2 teaspoon of cumin
1/2 teaspoon of black mustard seeds
10 mint leaves
a shallot (slice)
5 curry leaves
3 tablespoon curry powder (add bit of water to clump it)
2 tablespoon palm oil/ghee oil
500g of sliced beef
2 potatoes
2 cups of coconut milk
Steps:
1) heat pan with oil , add shallot, fenugreek,fennel seeds,cumin,black mustard seeds, curry leaves until you smell the aroma 
2) add curry powder and stir it for 3-4 minutes
3) add coconut milk, let it cook
4) add potatoes and beef let it cook for 8 minutes
5) add mint leaves
 DONE!

Dhal dipping sauce

In Malaysia, this is the popular dipping sauce for roti canai.

Ingredients:
100 g dhal beans
a potato
1/2 teaspoon of black mustard seeds, coriander,fennel seeds and cumin (spices)
5 curry leaves
50g carrot (dice)
50 g eggplant(dice)
2 cups of water
pinch of salt
1/2 teaspoon turmeric powder
1 tablespoon of chilies paste
2 dried chillies
1 tablespoon of palm oil

Steps:
1) boil water, add turmeric powder,salt,dhal, potato, carrot and eggplant for about 20 minutes or until it soft
2)then take out carrot and eggplant ,blend only dhal and potato.
3)heat oil, add all the spices and curry leaves,wait until you smell the aroma
4)Next add chilies paste and let it cook before add the blended dhal and potato
5) Add eggplant and carrot and cook it for about 8-10 minutes more.
*Done*

Serve it with roti canai and teh tarik~

Ikan Kembung Masak Lemak Cili Api

I can't pick a suitable word to translate this cuisine name in English .It is actually a mackerel fish cook with bird eye's chili/thai chili, turmeric leaves,coconut milk. This dish is so simple and easy to prepare. Malay race in Malaysia, especially Minangkabau ethnic loves this dish so much. My hubby loves this dish too..

Ingredients:

A mackerel fish
A turmeric leaf
3 thai chilies(pound it)
half tea spoon turmeric powder
a pinch of salt
a teaspoon of tamarind (add a bit of water to make juice)
5 French beans(add more if you like)
1 cup of coconut milk
1 cup of water

Steps:
1) Add pounded Thai chilies, tamarind juice, coconut milk,water, and turmeric powder in pan add heat for about 4-5 minutes.
2) when the coconut's milk fairly cooked, add turmeric leaves and french bean,let the bean cook before add fish and salt
3) That's all ~

**serve this with rice**

Fried koew teow

Ingredients:

500 g keow teow noodles
500 g prawns
500 g cockles (without shell)
50 g of chives (cut into half inch)
150 g of bean sprouts
3 eggs
3 cloves of garlic (finely chopped)
2 tablespoons of chillies paste
4 tablespoons of soy sauce (sweet)
2 tablespoons of oyster sauce
white pepper
salt
oil

Dressing:
Fried unions and spring unions leaves

Steps:
* Heat oil , add garlic stir until it brown then add chilies paste, and let it cook
* Next add soy sauce and oyster sauce
* add prawns and cockles
* add noodles and eggs
* add pepper, salt, chives and bean sprouts
* add dressing
*Done

Maarof's Fried Keow Teow

My late father was an amazing chef. This recipe is the first lesson that I learnt from him. I miss him badly lately. I made this recipe public so that everyone can enjoy and benefits from it. It's super duper delicious!

Ingredients:
(For 2-3 pax)

250 g of Keow Teow noodles
100 g sliced meat
100 g squids
100 g prawns
100 g fish ball ( cut in half)
100 g fish cake(slice)
100 g park choy (cut into 2 inch)
3 tablespoons of oil
2 cup of water
2 tablespoons of oyster sauce
100 ml of sweet soy sauce
2 eggs

Dressing:
fried onion
celery leaves (cut into 2 cm)
spring onion leaves (cut into half inch)

Blend:
A medium shallot
3 cloves of garlic
50 g of dried chillies

Steps:
1) heat the oil and and pour the blended ingredients . stir for 2-3 minutes
2) Add water, oyster sauce, sweet soy sauce and meat, let it cook for 7-8 minutes
3) Add eggs, fish cake, fish ball, prawns, and squids and leave it for 3-4 minutes
4) Add park choy and koew teow noodles stir for 2 minutes
5) dress it with spring onions, celery and fried onions

Now , It's ready to eat!

Basic Sponge Cake

Ingredients

120g flour
120g fine sugar
4 eggs (Medium or Grade B)
20ml of oil (palm or corn)/melted butter
20ml of water
10g ovalette
2 teaspoons of vanilla flavor

How to:
1) Beat eggs for about 8-10 minutes using mixture *optional = if you separate the yolk and white eggs you must beat the white eggs until fluffy means for about 5-6 minutes, then you can add yolk and beat it for another 4 minutes.
2) Add sugar,vanilla and ovalette, beat for 3 minutes
3)Add flour and mix it for 2 minutes
4) Add water,oil and mix it for 3 minutes
*prepare your mold by putting 1 tablespoon of oil/melted butter into it*
5) ready to bake at 150 Celsius for 45 minutes
* pre-heat the oven for 15 minutes at 150 Celcius

Awesome Possom Fried rice

The name of today's recipe was given by my hubby. I made this fried rice for breakfast yesterday and my hubby enjoyed it so much. So let's take a look the ingredients and steps to make it.

Ingredients:
a shallot
3 cloves of garlic
1 tablespoons of turmeric powder
a turmeric leaf
a carrot
3 teaspoons of fine salt
3 pieces of chillies
a spring onions
a celery leaf
Squids 300g
palm oil 3 tablespoons
two bowls of rice
black pepper

Steps:
1) Mix the turmeric powder and salt with the squids and leave them for 5 minutes
2) Slice a shallot, garlic, chillies.Slice finely a turmeric leaf
3) Dice a carrot and slice a spring onions leaf and a celery leaf in half inch size 
4) Heat the oil and add the slice shallot,garlic, chillies and wait until it slightly cook.(it turns a bit brown)
5) Then, add the carrot, slices of turmeric leaf and squids and stir it for 5 minutes
6) Add rice and add a little bit of ground  black pepper and salt
7) stir them for another 6-8 minutes
8) When it done dress the fried rice with slices of spring onions and celery

Mak Teh's fried noodles

Today recipe is named after my aunt "Mak Teh" . My late father loves her fried noodles so much thus I learn from her how to cook this fried noodles. Fortunately , my hubby also loves this fried noodles so I am please to share with you the recipe. Try this out and you won't regret at all!

Ingredients (for 500 g noodles)

Blend:
2 tablespoons of dried shrimp
2 tablespoons of blended dried chilies (click here!)
5 cloves of garlic
a shallot (size refer to the pic below**)
a tomato

300g of prawns
40 pieces of chives (cut into 1 inch long)
100g of sprouts
3 fish cake sticks (slice it)
5 tablespoons of palm oil
1 tablespoon of oyster sauce
1 tablespoon of chili sauce
2 tablespoon of ketchup
yellow noodles

Steps
1) Pour the oil into the hot wok
2) Then pour the blended ingredients and stir it for 3 minutes
3) Let it cook or until the chilies color turns a bit dark (usually for 5-8 minutes) and stir it sometime.
4) Add oyster sauce,chili sauce and ketchup. you can add a little bit of salt but be careful cause commonly dried shrimp slightly salty.
5) Next, get prawns and sliced fish cake into the wok and stir it for 3 minutes.
6) After that, add noodles and chives and stir it for 3 minutes
7) lastly, add sprouts and stir for 1 minutes
8) Now it's ready to eat!

* for the dressing you may add some fried onions and spring onions (cut into half inch)

Chillies Paste

Okay, today I wanna a share with u how I make my own chillies paste. Pretty simple plus the shelf life may up to 2 weeks without adding any chemical so it is very very healthy product!

You need:
Dried chillies (300g)
Hot water
2 tablespoons of palm oil
1 teaspoon of coarse salt

How to:
1) Firstly soak the dried chillies with hot water for 6-8 minutes
2) Then, you have to drain it
3) Place it into the blender and add oil and some water (put reasonably amount of water, fair enough for the blender to operate smoothly, don't add too much !)
4) Let it cool for about half an hour to 45 minutes
5) Keep it into bottles or any kind of food container (make sure air tight)
6) Finally sprinkles some coarse salt on it

DONE! easy huh?
